Here's a recipe for a vegetarian Punjabi dish called **Aloo Gobi**:

**Ingredients**

- 2 tablespoons vegetable oil

- 1 onion, chopped

- 2 cloves garlic, minced

- 1 tablespoon grated ginger

- 1 teaspoon ground cumin

- 1 teaspoon ground coriander

- 1/2 teaspoon ground turmeric

- 1/4 teaspoon cayenne pepper

- Salt and pepper to taste

- 2 potatoes, peeled and chopped

- 1 head cauliflower, chopped

- 1 can (14 ounces) diced tomatoes

- Fresh cilantro for garnish

**Instructions**

1. In a large pot over medium heat, heat vegetable oil. Add onion and cook until onion is translucent.

2. Add garlic and ginger and cook for another minute.

3. Add cumin, coriander, turmeric, cayenne pepper, salt, and pepper. Cook for another minute.

4. Add potatoes and cauliflower. Stir to coat with spices.

5. Add diced tomatoes and enough water to cover the vegetables by about an inch.

6. Bring to a boil and then reduce heat to low. Cover and simmer for about 30 minutes or until vegetables are tender.

7. Serve hot with rice or naan bread.

8. Garnish with fresh cilantro.
