Here's a recipe for a vegetarian North Indian dish called **Chana Masala**:

**Ingredients**

- 2 cups dried chickpeas

- 1 tablespoon vegetable oil

- 1 onion, chopped

- 2 cloves garlic, minced

- 1 tablespoon grated ginger

- 1 can (28 ounces) crushed tomatoes

- 2 teaspoons ground cumin

- 2 teaspoons ground coriander

- 1 teaspoon ground turmeric

- 1/2 teaspoon cayenne pepper

- Salt and pepper to taste

- Fresh cilantro for garnish

**Instructions**

1. Soak chickpeas in water overnight.

2. Drain chickpeas and rinse with fresh water.

3. In a large pot over medium heat, heat vegetable oil. Add onion and cook until onion is translucent.

4. Add garlic and ginger and cook for another minute.

5. Add crushed tomatoes, cumin, coriander, turmeric, cayenne pepper, salt, and pepper. Simmer for about 10 minutes.

6. Add chickpeas and enough water to cover the chickpeas by about an inch.

7. Bring to a boil and then reduce heat to low. Cover and simmer for about an hour or until chickpeas are tender.

8. Serve hot with rice or naan bread.

9. Garnish with fresh cilantro.

Here's a recipe for a vegetarian Rajasthani dish called **Dal Baati Churma**:

**Ingredients**

- 1 cup whole wheat flour

- 1/2 cup semolina

- 1/2 cup ghee

- Salt to taste

- 1 cup split yellow lentils (toor dal)

- 1 onion, chopped

- 2 cloves garlic, minced

- 1 tablespoon grated ginger

- 1 teaspoon ground cumin

- 1 teaspoon ground coriander

- 1/2 teaspoon ground turmeric

- 1/4 teaspoon cayenne pepper

- Salt and pepper to taste

- Fresh cilantro for garnish

**Instructions**

For the Baati:

1. Preheat oven to 375°F.

2. In a large bowl, mix together whole wheat flour, semolina, ghee, and salt.

3. Add enough water to make a stiff dough.

4. Divide dough into equal portions and shape into balls.

5. Place balls on a baking sheet and bake for about 30 minutes or until golden brown.

For the Dal:

1. In a large pot over medium heat, heat ghee. Add onion and cook until onion is translucent.

2. Add garlic and ginger and cook for another minute.

3. Add cumin, coriander, turmeric, cayenne pepper, salt, and pepper. Cook for another minute.

Here's a recipe for a vegetarian Chinese dish called **Vegetable Fried Rice**:

**Ingredients**

- 2 cups cooked rice

- 2 tablespoons vegetable oil

- 1 onion, chopped

- 2 cloves garlic, minced

- 1 tablespoon grated ginger

- 1 carrot, chopped

- 1 bell pepper, chopped

- 1 cup frozen peas

- 2 tablespoons soy sauce

- Salt and pepper to taste

**Instructions**

1. In a large pan over medium heat, heat vegetable oil. Add onion and cook until onion is translucent.

2. Add garlic and ginger and cook for another minute.

3. Add carrot and bell pepper. Cook for about 5 minutes or until vegetables are tender.

4. Add frozen peas and cook for another minute.

5. Add cooked rice and soy sauce. Stir to combine.

6. Cook for another minute or until rice is heated through.

7. Season with salt and pepper to taste.
